HACCP, what is that?
HACCP stands for Hazard Analysis and Critical Control Points, the foundation of a successful Food Safety System that is used, recognized and maintained worldwide even its native birthplace The United States of America.

This system came to light as a need for the US space program and was developed by U.S. Army Natick Laboratories, NASA and Pillsbury Company. This program has been mandatory for decades for Low-acid and acidified canned foods, Fish and Fishery, Meat and Poultry and finally Juice Products.
Why do you need HACCP?
With H-A-C-C-P you are able to understand your manufacturing process in detail. How?
H-azards investigation that might come or form with raw and packaging materials. Onsite, you need to perform an investigation of Who, How and Where raw/packaging materials will be stored, handled and processed.
A-nalysis of risks hazards for each raw material, packaging material, handling process and manufacturing equipment where food will go through. Each risk analysis is performed based on Biological, Chemical and Physical potential hazards that are critical to food safety.
C-ritical hazards found through the Hazard Analysis are identified and reviewed for potential risks that they might bring to our food safety.
C-ontrol of the identified hazards come as a result of different practices (Pre-Requisite Programs) that we implement in each product processing chain. If we are not able to control and eliminate these hazards through Pre-Requisite Programs than we identify through the process a point where if controlled and monitored brings the system to Food Safety.
P-oint is that we need to perform a good Hazard Analysis and identify that Point that is most Critical to Control the food safety of our product.
This identified CCP (Critical Control Point) is now our most controlled and monitored point where we gather and verify data of conformity to our own practices and industry food safety. Through this CCP we deliver food safety to our customer and consumers.
